This flaky, delicate pastry dough is key to our spanakopita, of course, but also fancies up a weeknight dinner or two. And yes, phyllo is an incredibly versatile if not slightly (very?) finicky ingredient to work with. It often tears and can be hard to wrangle for more labor-intensive recipes, like baklava. These recipes, however, couldn’t be easier, and even if the phyllo rips, it often doesn’t even matter! We love a forgiving dough, which is why we can't stop baking these 10 phyllo dough recipes.

First things first, you're going to want to know a few phyllo-handling tips to help you achieve the apple strudels of your dreams. To keep the tissue-thin layers of phyllo intact as you layer them for that scrunch bread, you're going to want to keep your sheets of dough safe under parchment paper, plastic wrap, or waxed paper (followed by a damp towel) to keep them from drying out. Similarly, melted butter is the delicious glue that'll adhere those thin layers together for baklava, so don't be shy with your pastry brush.

You might be wondering: Can I use phyllo dough instead of puff pastry? And the answer is a resounding "yes!" especially if you like your results to be on the crispier side. Puff pastry is on the buttery end of the dough spectrum (which leads to fluffy, light results), while phyllo will keep things delicate and crispy, which we especially love for savory pies, like our vegan pot pie and tuna spanakopita pie.
