  • 2 ½ cups All purpose flour (300g)
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Butter, melted (200g)
  • 1 cup Brown sugar (200g)
  • ½ cup White sugar (100g)
  • 2 Eggs
  • 2 teaspoon Vanilla extract
  • ¾ cup White chocolate chips or chunks (additional ¼ cup for topping if desired)

How to make the best ever chewy and fudgy blondie recipe?

Preheat the oven to 350 degrees F. Line a 9-inch by 9-inch baking pan with parchment paper.

Mix all the dry ingredients in a bowl, i.e., flour, baking soda, and salt. Keep this aside.

Add melted butter, brown sugar, sugar, eggs, and vanilla extract in another bowl and whisk until light and fluffy.

To this, add the dry ingredients and mix until combined.

Fold in white chocolate chips. Of course, adding white chocolate chips is entirely optional.

Spread this into a prepared baking pan and top with more white chocolate chips if needed.

Bake for 25 to 30 minutes or until a toothpick inserted comes out clean.

Let it cool completely, cut it into pieces of the desired size and enjoy.

The baking time may vary depending on the type of pan used - whether it is a glass baking dish, a metal pan, or a silicone mold. But it all works, and you can bake in any of them.

I have used a silicone pan, and thus I have not used parchment paper. If you use glassware or metalware for baking, then line your baking pan with parchment paper or grease with oil or butter.

You can add nuts like almonds, pecans, or walnuts, along with white chocolate, if desired.

If using melted salted butter, skip adding additional salt to the recipe.

I like to use a combination of brown sugar and regular sugar. You can use either one of these.

If you want the best-tasting blondies for this holiday season, I highly recommend you use clarified brown butter or use desi ghee. It gives a nutty flavor to your blondies.

To make it extra special, as you see in the picture, you can add a layer of white chocolate at the center of your blondies instead of adding them as chunks/chips to your batter! For the white chocolate layer, melt ¾ cup of white chocolate and spread it to a thin, even layer on a silicone sheet, silicone mold, or parchment paper and let it set for a few minutes in the refrigerator. To assemble, pour half of the blondie batter into the baking pan and place the white chocolate layer prepared above. Follow this by spreading the remaining half of the batter and then baking as per instructions in the recipe.Note:You can add white chocolate chips to the batter and a white chocolate layer as described above to prepare thebest-ever double-white chocolate blondie!

Substitutions and Variations for classic blondies

Instead of white chocolate chips, feel free to add dark/milk chocolate chips, butterscotch chips, peanut butter baking chips, or M&Ms/Cadbury Gems.

You can also use white chocolate chips with pecan, walnut, or almond if desired.

If making it for the holiday season, you can make it festive by adding mixed dried berries or cranberries.
