  • All-purpose flour- I like to use a blend of whole wheat and all-purpose in this recipe.
  • Kamut flour- or use any other wheat flour of choice
  • Plant-based cream cheese- Just like butter, there are a wide variety of options.
  • Powdered sugar- for the icing.
  • Fresh fruit- I used strawberries, blueberries, grapes, raspberries, and kiwi. You really can use any fruit you like for this.

Step-By-Step For Making The Fruit Pizza

  1. Mix the sugar cookie dough.
  2. Form it into a rough circle. You can also use a round cake pan for this, but I prefer just forming it on a sheet pan.
  3. Bake the sugar cookie crust. This should not take more than 15 minutes.
  4. Allow the sugar cookie crust to cool completely.
  5. Mix your cream cheese icing until smooth and creamy.
  6. Spread the icing on the sugar cookie crust
  7. Cut all of your fruits to the desired shape and size, and arrange them on the pizza however you like.

Most people don't enjoy whole wheat recipes because they do not taste like the original. I want to show you how to keep your recipes tasting as close to the original as possible.
  • The main tip for baking with whole wheat flour is to be careful not to overmix your dough. In this recipe, the ingredients are mixed together just enough to combine. Do not mix them more than that!
  • Another very important tip is to not overbake your sugar cookie dough. This will keep it nice, soft, and tender, which is exactly what you want.

  • Do not overbake the crust. I already stated this above, but let's reiterate because this is such an important part of this fruit pizza recipe. To keep your crust soft and tender, you will have to be careful when you are baking it. The baking time should only be about 15 minutes.
  • Allow the cookie base to cool before topping. If you don't let it cool, and you add the cream cheese icing and the fruit on top, not only will the icing melt, but the fruit will also start to wilt and won't hold its shape as it should.

Kamut is a kind of ancient grain that has recently gotten very popular. It originates from Egypt thousands of years ago and has been nicknamed the "Pharoah Grain" because it was found in several kings' tombs.

Ingredients

  • ½ cup softened butter
  • ½ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour I used Kamut, but you can also use a whole wheat pastry flour, white whole wheat, einkorn, etc.
  • ¼ teaspoons salt
  • 2-5 cups fruits for topping
  • 2 tablespoons softened cream cheese
  • 2 tablespoons softened butter
  • 2 ½ cup powdered sugar
  • ½ teaspoon vanilla

Instructions

  • Preheat oven to 325 degrees.

  • Line a baking sheet with parchment paper and set aside.

  • In a medium-size bowl, add the butter and granulated sugar and mix for about 1-2 minutes. I used a hand mixer for this. You don't want to whip this until it is light and fluffy in this recipe. You want a more dense cookie, and if you mix too much, this won't happen.

  • Add in the egg, vanilla, and almond extract. Mix only to combine.

  • In a small bowl, add the all-purpose flour, whole wheat flour, and salt. Mix.

  • Now, add the dry ingredients to the butter mixture, mix to combine.

  • Take the dough, and press it into a circle on your baking sheet. I made mine into a 10-inch circle. It baked into about 12 inches.

  • Place in oven and bake it for about 15-18 minutes.

  • Remove from the oven and allow it cool. If you used parchment paper, you can always remove it carefully from the pan and set it on a cooling rack.

  • In a medium-size bowl, add the butter, cream cheese, powdered sugar, and vanilla. Blend it until it is smooth. I used a hand mixer for this.

  • Cut your fruit into the shapes and sizes you want.

  • Once the cookie base is cooled, spread with the icing.

  • Then add your fruit however you like.

  • Here is a note, if you are not going to eat this pizza within an hour or 2, wait to add the icing and fruit. If the fruit is added too early, it starts to droop a little and isn't as pretty.

  • Once it is served, if there are any leftovers, wrap them tightly and store in the fridge.

  • They hold well for about 2 days.

  • Now, sit back and enjoy. You deserve it!
