INGREDIENTS

As I just mentioned, it takes less than a handful of ingredientsto make this quick and easy keto chocolate mousse recipe from scratch.

Here's what you'll need:

  • ½ Cup water
  • Just under 1 ¼ Cup keto dark chocolate chips
  • 1 ½ Cup heavy cream
  • 1 Teaspoon vanilla extract
  • 2 Tablespoons Confectioners Swerve

It doesn't get any simpler than that, am I right?

Now, before getting into the recipe, let's go over the details of some of the ingredients we'll be using for this chocolate mousse.

SUGAR-FREE & KETO-FRIENDLY DARK CHOCOLATE

Ok, so to give this keto mousse its rich and decadent chocolate flavor, we will be using melted dark chocolate chips.

Of course, you are going to want to use sugar-free and keto-friendlychocolate chips.

That said, my personal go-to chocolate chips for all low carb desserts is Lily's Baking Chips. Not only are they sugar-free, but they also have 0 NET CARBS and are super tasty.I literally can't taste the difference between them and regular chocolate chips!

However, if you can't find Lily's chocolate chips, you can use ChocZero Dark Chocolate Chips which will work really well too. They are also sugar-free and have only 1 NET CARB per serving.

KETO SWEETENERS TO USE & AVOID

So I like using dark chocolate chips for this recipe because it adds a slight hint of bitterness along with some sweetnessto the mousse.

But, to really sweeten the mousse up without adding any sugar, we will be using a couple of tablespoons of Confectioners Swerve, giving it the perfect balance of flavors.

However, if you don't have Swerve and want another keto friendly sweetener option, I recommend using Lakanto's Powdered Sweetener. This is essentially the same thing as Swerve and can be used in its place to substitute with sugar in any recipe.

As far as what to avoid, I suggest staying away from pure Stevia and stevia-based sweeteners.

Stevia is actually 300 times sweeter than regular sugar in it's purest form, so it's not an ideal sugar substitute for this recipe.

Also, stevia based sweeteners are often mixed with maltodextrin, maltose, or dextrose. And those are just hidden names for sugar, so you'll obviously want to stay away from eating those on the keto diet.

So, to keep this low carb chocolate mousse keto-friendly, keep all of these tips in mind.

HOW TO MAKE KETO CHOCOLATE MOUSSE

Now, what I really love about this recipe is how quickly it comes together.

You can have it ready in about 10 minutes - perfect for when you're craving chocolate and want to make something on the spot.

And since this recipe makes 6 servings, you can treat your family and share it with them, or save it for the next few days. Oh, and you can easily double or triple this recipe if you want more chocolate mousse!

Ok, I know by now you're ready to get baking, so let's get to it!

STEP 1: MELTING THE CHOCOLATE

First, you are going to place the chocolate chips in a large heat-safe bowl.

Then, put a small saucepan on the stove, pour the water into it, and bring it to a boil.

Once the water boils, you will pour a little bit over the chocolate, then mix until the chocolate has completely melted and the water and chocolate are well-combined.

Make sure to only pour a small amount of water at a time - you can always add more if needed.

PRO TIP:If the chocolate doesn't fully melt from the water, you can microwave the mixture for about 15-20 seconds.

Once the chocolate is melted, set it aside to cool to about 98°F (36°C).

Step 2: Preparing the whipped cream

While waiting for the chocolate mixture to cool, you can get started on the whipped cream.

First, beat the heavy cream with the vanilla and Swerve until you get soft peaks.

Now, you can either whip the cream by hand with a whisk (which will take a little longer) or use an electric mixer.

Whichever method you choose, make sure you don't over-beat the mixture, as cream with stiff peaks won't give you that classic mousse texture.

Step 3: FINISHING THE MOUSSE

Ok, so, once the chocolate is cooled, you will beat it until it is slightly fluffy like in the pictureabove. Be careful not to over-beat it though, or the chocolate will get too stiff.

After your chocolate is ready to go, put aside 4 tablespoons of whipped cream for placing on top of the mousse when it is finished.

Then you can fold the rest of the whipped cream gently into the chocolate with a rubber spatula. And make sure you are gently mixing it in as too much mixing can deflate the airiness of the mousse.

Anyway, after it is mixed, you can pour the mousse into individual serving cups and top each one with a spoonful of the whipped cream you set aside.

Finally, you can serve your keto chocolate mousse immediately or chill it in the refrigerator. The mousse takes on a firmer texture the longer it's been refrigerated, so you'll want to take it out of the fridge about 15-20 minutes before serving.

You can also save your mousse for longer by freezing it for1-2 months.And in terms of maintaining its whipped texture, the sooner you freeze it, the better.

When you are ready to eat the mousse, thaw it in the fridge overnight and take it out 15-20 minutes before serving.If it's looking a bit firm, you can gently fold the mousse over itself to bring back the soft texture.

But if you like frozen treats, you can skip thawing it all together and serve it as frozen chocolate mousse!

Instructions

  1. Place chocolate chips in a large heat-safe bowl.
